AJDOV KRAPEC - BUCKWHEAT CAKE with COTTAGE CHEESE

Traditional buckwheat cake with cottage cheese can be sweet or savoury dish. It can be served as a delicious and healthy dessert, a very tasty appetiser or a side dish. The cake was traditionally baked in special bread oven built of bricks, which made the cake even more delicious.

Buckwheat cake with cottage cheese
The recipe was traditionally made in Prlekija, Northeastern part of Slovenia. This mostly rural region is famous for its vineyards with many famous wine producers, good pumpkin seeds oil and some traditional Slovenian dishes,  Buckwheat spoon bread and this cake being among them. 


Buckwheat cake recipe

Ingredients:

200 g buckwheat flour
100 g wheat flour
200 ml boiled water
salt to taste

300 g cottage cheese
100 g sour cream 
1 egg
salt to taste
2 to 3 tbsp sugar or to taste, if you are making the sweet version. 

Put buckwheat flour in a bowl add salt and boiling water. Stir with big wooden spoon to evenly wet the flour. Keep aside to cool down. Then add wheat flour and knead soft dough. Add more water if needed. The dough should be soft but not to wet so you can work with. Put it to rest.

and knead the dough.
Now make cottage cheese coating. Step buy step mix all the ingredients together in the order in which they are written.

Roll out the dough in round shape and put it into the baking tray. You can use baking paper or spread butter and sprinkle with flour.

and put it into baking tray.
Add cottage cheese coating and put in hot oven, 200 degrees C, for about 30minutes or until the top becomes nicely coloured.

and bake in hot oven.
It is a lot tastier and delicious to serve it warm. As a salty dish it goes very well with a good glass of wine. In summertime it can be served with traditional cucumber salad from this region. 


Served when still warm, very tasty!
As a sweet dish it can be a delicious dessert served with some seasonal fruit sauce or fresh fruits.
