Apple pie is a very old, very traditional and very popular recipe that can be made in many different ways. We all know the famous American version. However, in Europe many countries have their own traditional recipe. We make many different pies in Slovenia and almost everyone makes it a bit differently.
My tip: You can add nice decoration: slice apples into very thin pieces and fold them on top to make a flower like pattern, see my photo. Sprinkle with sugar and lemon juice before baking. When baked spread a thin layer of good honey over apples.

We all learn from traditional way of preparing food. Modern cooking and baking is changing quickly. Actually our perception of good and healthy food is changing too.
However, we all love good desert. What makes it good is the taste, aroma, sweetness and the memories of our childhood, the smell of baking etc.
This is my version of this popular dessert. In this recipe I tried to make a combination of a very popular traditional recipe taking into account new trends like reducing the amount of flour part, adding walnuts, more apples that are prepared in advance etc.

For the dough:
200 g butter - it can also be coconut oil
280 g flour - I am using whole wheat flour
1 pinch salt
2 egg yolks
2 tbsp of white wine
1 tbsp sour cream, optional
It is important that all the ingredients are cold, especially if you are using coconut oil. Mix all the ingredients together very quickly. You can use food processor, very shortly! Wrap the dough into foil and let it rest. You can make the dough evening before and keep it in cool a place over night.

For the apple filling:
1 kg of apples - 4 big apples
50 ml of wine
1 lemon - juice and zest
4 tbsp of sugar - usually I am using brown cane sugar
1 tsp or a stick cinnamon
few pieces or a pinch of cloves
1 clove of cardamom
Wash apples very well. You can also peel them. Than you cut or grate them. Put into a pot, add lemon, wine and all the spices. Cook for a few minutes to soften. Than drain the juice out and cook only juice on high heat so that the water evaporates and the sugar begins to caramelise. Keep aside to cool down.

For the walnuts filling:
2 egg whites
1 pinch of salt
2 tbsp of sugar
150 g of walnuts or pecans
Mix egg whites with salt to get egg snow. You can do it by hand or, better and easier, use a blender. Then step by step very gently mix in sugar and then grated walnuts.
Now you can begin putting all parts together.
Roll out the dough. You can make it more or less thin, depending on the size of baking tray or your preference. Baking tray can be traditional round shape or any other shape you have. You can grease the tray or use baking paper.

Spread the walnut filling on the top and put in pre-heated oven - 180 degrees C for 5 minutes. Take the tray out of the oven and evenly spread the prepared apples. Finally, pour caramelised juice on top. You can also sprinkle more cinnamon and sugar on top if you want. Put in the oven and bake 20 more minutes at 200 degrees C.
When baked, wait to cool down and serve with tea or coffee.
