COTTAGE CHEESE CAKE

Sometimes we taste a dish that is just delicious. We would like to make it at home but we do not have a recipe. If you try to do it and you are lucky it will taste like the real thing. This cottage cheese cake is something like that. I ate it, I liked it and I did it with a combination of two recipes that I knew. And I still make it frequently. 


Cottage cheese cake
This cake is made of two parts, chocolate base and cottage cheese filling. 

Ingredients:

For the chocolate base:


100 g of butter

100 g of sugar
70 g of chocolate
3 eggs
2 tbsp of good rum
70 g of all purpose flour
1 tsp baking powder


You can use any chocolate you want,
I like dark one.
Butter and sugar;
I prefer brown sugar.
All the ingredients should be room temperature. 

Firstly, mix butter with sugar. Melt the chocolate under the steam of hot water and add it to the butter-sugar mixture. Blend well to incorporate everything very well together. Add eggs, one by one and blend for a few minutes. Add the rum and blend. Finally, slowly stir the flour with baking powder into the mixture. Put into baking tray, 30/20cm or a round one, as a cake. Bake in preheated oven at 180 degrees C for about 10 minutes or until it hardens. Cottage cheese filling is very heavy so you have to make sure that chocolate base is already hard enough. If not cottage cheese will drown to the bottom and we do not want that.

Very gently stir the flour into 

For the cottage cheese filling:

350 g of cottage cheese
200 g of sour cream
2 eggs
3 tbsp of sugar
salt to taste
1 tbsp of semolina or bread crumbs
1 tsp of vanilla

Mix well all the ingredients into a creamy filling. 
Mix all the ingredients together in a bowl to make a creamy filling. Spread slowly and carefully over already hardened chocolate base. Bake another 20minutes or until cottage cheese starts to get some colour on top.

Serve with tea or coffee and enjoy!
