MUSHROOMS SAUCE WITH CREAM

This very simple and delicious sauce is really easy to make. It is excellent with all kinds of meat dishes. It can be also made with any pasta and served as a main dish. 

Mushrooms sauce with cream.
Traditionally, mushroom dishes were mostly seasonal dishes. Today fresh mushrooms are available all year round. But of course these can not be compared to fresh porcini mushrooms picked in the early morning in the near forrest and prepared on the same day for lunch. 

Ingredients:

500 g of fresh mushrooms and handful of dried porcini
1 onion
spring onion - green parts
3 strokes of garlic
4 tbsp of olive oil
salt and pepper to taste
fresh thyme
1 bay leave
50 ml of clear soup or dashi 
50 ml of fresh cream or 
1 tbsp of sour cream
fresh parsley to garnish

Various types of mushrooms, also soaked dried porcini mushrooms...
Cooking method:

First pre-soak dried porcini in water. Nicely slice all other ingredients. 
Heat the oil and stir fry onions for a few minutes. When onions start to get nice yellow colour, add the mushrooms and stir fry for another few minutes. When the excess water from the mushrooms evaporates, add crushed garlic, salt, pepper, bay leave and thyme.

Mix all together well. Add soup and cook for a few minutes. At the end add cream. Garnish with finely chopped parsley and serve.

You can serve this very delicious creamy sauce with any meat or pasta. On the photo I served it with traditional Slovenian ravioli called žlikrofi. It can be also delicious with Kozjansko buckwheat  pockets or with Buckwheat rolls with cottage cheese , etc.
