ROLLED DUMPLINGS IN A SOUP

In Eastern part of Slovenia called Styria traditional dish "štruklji" or rolled dumplings are prepared in a different way. They cut the hole roll into portions and cook them directly in salted boiling water. They serve them like a soup.

For this recipe you can use rolled dumplings with different fillings. My mum use to make soup with  rolled dumplings made with  fried eggs filling and or rolled dumplings with cottage cheese filling.

I must admit that I do not cook rolled dumplings in a soup so often. I usually cook them wrapped in a napkin and serve  them as a main or as a side dish or as a dessert.

But from time to time and for this blog, I made them in a soup that is delicious and very nice for a change. For this, I made rolled dumplings with cottage cheese and spinach filling.

First we have to make the stretched dough. You can use the same recipe as we did before. See the LINK!

Ingredients for the dough
Make a nice soft dough
Ingredients for the filling:

200 g of cottage cheese
100 g of sour cream
100 g of precooked, well drained and smashed spinach leaves
1 egg
50 g of semolina or bread crumbs for thickening the filling
salt
black pepper
nutmeg

Precooked spinach, well drained and smashed 
Mix all the ingredients together and keep aside for about 15 minutes. If the filling is too soft, you can add more semolina or bread crumbs.

Add more bread crumbs if needed
Stretch the dough on a cotton sheet  evenly to each side and spread the filling all over. Roll it in a roll and cut with a wooden knife into small pieces.

Cut the roll into small portions

Boil the water, add salt and put in the portions of rolled dumplings. Lower the heat and simmer the soup for 15 to 20 minutes.  Before serving garnish with chopped fresh parsley or chives.
