STRUDEL WITH TARRAGON

Last time we made Apple strudel which is well known dessert that originated from Habsburg Empire. As already mentioned, we have many kinds of strudels in Slovenia. The recipes vary from house to house. We  try even today to find new delicious combinations. To achieve that we are experimenting with different filings.

One of a "very Slovenian" kind of filling is made with cottage cheese and tarragon. We are using tarragon as a herb that gives cottage cheese filling a very special and delicious taste. In one of my previous posts we made Slovenian traditional rolled dumplings with tarragon.  We also make our famous dessert Potica with that herb.

APPLE STRUDEL

Apple Strudel is traditional dessert all around Alpine Regions. The original recipe from 18th century spread from Wiena (Austria) to all neighbouring countries and to all countries of former Habsburg Empire. It is made of stretched dough filled with grated apples and spices.

PUSTNI KROFI - SLOVENIAN CARNIVAL DOUGHNUTS

In Slovenia, like in many other countries around the world, we celebratE the Carnival Season. For us, the carnival is called Pust. Pust scares the Winter away and welcomes the Spring to begin. Many towns in Slovenia, for example Ptuj or Cerknicaare famous for their Carnival. Like other festivities, Pust has some traditional dishes to celebrate with. This is also time before the beginning of fasting in Christianity, so the last chance to eat very rich food before Easter. The old saying tells us that Pust has to be fat, greasy around the mouth in order to have good harvest later in the year. 
Among famous traditional dishes are Pustni krofi - Carnival Doughnuts and Krhki flancati - Brittle Flancati.

COTTAGE CHEESE CAKE

Sometimes we taste a dish that is just delicious. We would like to make it at home but we do not have a recipe. If you try to do it and you are lucky it will taste like the real thing. This cottage cheese cake is something like that. I ate it, I liked it and I did it with a combination of two recipes that I knew. And I still make it frequently.

SLOVENIAN DRY FRUITS BREAD - CHRISTMAS BREAD

Holiday season is approaching fast. In December, many fairs and festivals offer traditional Christmas cake or bread. Every country has its own specialities for the holiday season. In Slovenia we have a few very traditional cakes and breads
Sweet bread made of dry fruits and walnuts is only one of them. This one is easy to make, very tasty and healthy. It is also completely vegan.

Štruklji, in Slovenian language, is a very traditional Slovenian dish. This dish is made of different doughs as well as different fillings. It can be cooked or baked, served as main or side dish. Štruklji can also be a delicious dessert.
