BUCKWHEAT ŠTRUKLJI - BUCKWHEAT ROLLS WITH COTTAGE CHEESE

Ajdovi štruklji - Buckwheat rolls with cottage cheese feeling is a very  traditional and very popular dish that can be served as side dish with different stews, or with fruits and honey or sugar as a dessert.

Buckwheat štruklji-rolls with cottage cheese:

I would recommend to use the same recipe for the dough as we used in previous recipe Buckwheat štruklji with walnuts. When I  make štruklji, I usually make half of the dough with walnuts and another half with cottage cheese filling. In that case you have to adapt the quantity of the filling. 

Ingredients for the dough:

200 g of buckwheat flour 

100 g of harder type of wheat flour 
1 tbsp of sour cream 
Salt to taste
300 ml of boiled water
1 tbsp oil


Buckwheat flour with boiling water
Adding sour cream to the flour.

Slowly pour boiled salted water over the buckwheat flour and mix with a wooden spoon well so that all the flour gets wet. Keep aside to cool down. Than make the dough by adding sour cream and wheat flour. The dough should be soft but must not stick to your hands. If necessary add more wheat flour. When finished spread oil all around the dough and wrap it into foil to rest.


Ingredients for the filling:

400 g of cottage cheese

180 g of sour cream 
2 eggs
salt to taste
3 tbsp of bread crumbs or
2 tbsp of semolina 

Drain any excessive water out of cottage cheese and sour cream first. Put into a large bowl, add all the other ingredients and mix well. Keep to rest for 30minutes to thicken. 



Making cottage cheese filling

For the garnish:

2 tbsp butter

bread crumbs

Roll out the dough. Make sure that you are using enough flour. The thickness should be approximately 5 mm or less if you want to have smaller rolls. I prefer to have dough rolled out as thin as possible. Spread the filling over 2/3 of the dough.

Now you  start rolling to make a roll. You can make one long roll or better cut it to fit the width of your cooking pot. 
Wrap the rolls into wet cloth and tie on the sides. I am often using just baking paper instead, but make sure to tie the ends to protect the round form of the roll. 


Cut to the width of the pot.
Wrap and tie on both sides.

Cooking method:

Put the rolls into salted boiling water so that 2/3 of the roll will submerge in the water. Cook covered on low heat for about 20 minutes. When cooked leave them in the water for about 10 more minutes to cool down a little.


Cut and serve garnished with roasted bread crumbs on butter. 



Buckwheat štruklji as a side dish to meat stew and vegetables.

You can use buckwheat rolls as you would use different dumplings. Serving it as a dessert is also interesting. Just add sugar or honey and fresh fruits or fruits sauce.
