SLOVENIAN DRY FRUITS BREAD - CHRISTMAS BREAD

Holiday season is approaching fast. In December, many fairs and festivals offer traditional Christmas cake or bread. Every country has its own specialities for the holiday season. In Slovenia we have a few very traditional cakes and breads
Sweet bread made of dry fruits and walnuts is only one of them. This one is easy to make, very tasty and healthy. It is also completely vegan. 

Dry fruits bread 
You can bake this very popular bread in advance and store it, wrapped in foil, in the fridge for days. It will stay fresh and tasty and you will always have something to put on the table. 

Ingredients:

250 grams of whole wheat flour 
2 tbsp of sugar - fruits are already very sweet 
1 tsp of baking powder or baking soda
1 tsp of vanilla extract - optional
1/2 tsp salt 
You can mix different types of flour or use the flour you usually use for baking.

250 g of dry prunes 
100 g of dry apricots
100 g of dry figs
100 g raisins
2 table spoon of rum or cognac
1 tsp of cinnamon
1/2 tsp of cloves
1/2 l of hot water
100 g walnuts chopped to small pieces
100 g chopped almonds or hazelnuts or dark chocolate 

   
Dry fruits and nuts

You can use different dry fruits but I would say prunes, figs and raisins are essentials to get the good flavour. You can also take different proportions of fruits, depends on what you have and like.
You can substitute one type (100g) of nuts with dark chocolate chopped to small pieces. 

Cut dry fruits into small pieces and soak them for a few hours or over  night  in water with rum, cinnamon, and cloves. 


Soak dry fruits in water with rum, cinnamon, and cloves. 
In a bowl mix flour, salt, sugar and baking soda. Add all the water from fruits and mix well. Then add fruits and nuts, mix well.


At the end add nuts and fruits to the mixture.
Bake in baking tray. Usually I am using a long one: 30cm/10cm and baking paper, but you can also use different one.


Put the mixture into a baking tray.
Put in the preheated owen on 170 degrees C and bake for 50 to 60 minutes. 


Traditional dry fruits bread
You can serve it with tea or coffee and also with a glass of mulled wine, which is also very traditional part of this holiday season.
